NU FS100 Chapter Notes - Chapter 7: Food Processing, Microfiltration, Membrane Technology
Document Summary
Chapter 7 unit operations in food processing. Food processing is the procedure that takes raw materials and prepares them so they are ready for human consumption. This procedure usually comprises of a series of physical and chemical processes that can be broken down into basic operations. Includes a range of operations from harvesting on the farm, to transporting live animals to convey a product. During all these operations, quality, safety and sanitary conditions are maintained, and bacterial growth is also minimized. Transfers and deliveries of materials must be on time and kept to quality. Foods that are grown in open environments like farm or ranches require to be cleaned before used. Cleaning methods are prescribed by the type of surface a food product has. The physical removal of soil, dust, organic matter, and pathogens from a surface. Does not necessary kill bacteria but it will remove them by scrubbing and rinsing those that are attached to soil or dust particles.
