Some time ago I tasted ostrich meat, and what was amazing to mewas that the meat very much resembled beef, much more than itresembled chicken, turkey or duck meat. And even more than lamb andpork resemble beef.
The resemblance is both in look, both raw and grilled, and intaste (only tried grilled). I would have thought that the meat ofrelated animals would have similar taste. Why is it that the meatof an ostrich, which is a bird, doesn't taste like that of otherbirds?
