If it only cuts at a few sites, then you know it is folded. Extreme acid and high ph unfolds the acid in the stomach. You can break peptide bonds in acid, but you need 1 m hcl at 100 degree celsius overnight. 100 degree c and it doesn"t stay there overnight. It is maximally active at ph between 1 and 2. It cuts random bonds, at about 20-30 amino acid long chains.
