NU FS100 Lecture Notes - Lecture 11: Soap, Ionizing Radiation, Invisible Waves
Document Summary
Radiation: energy moving through space in invisible waves. Have energy capable of reducing a number or microorganisms. A cold process that maintains physical and sensory characteristics of the product. E(cid:374)ergy (cid:449)a(cid:448)es are (cid:374)ot retai(cid:374)ed i(cid:374) food, as it si(cid:373)ply passes through the (cid:271)ea(cid:373) so it does(cid:374)"t (cid:272)o(cid:373)e i(cid:374) contact with any radioactive materials. Pre-packaged foods must be labelled by an international symbol and also have the statement (irradiated) Foods that contain more than 10% of an irradiated ingredient must also be identified in the list of ingredients. There is no greater nutrient loss as compared to what occurs in other methods. Note: research and testing show that irradiation is recognized as safe, however, it complements but does not replace the need for proper food handling as it does not kill all bacteria! Uses magnetron to transform electrical energy to become microwaves. Requires polar molecules like water for movement that creates friction. Generates heat from the inside of food.
