When we think about the food we have on the planet, it"s been historically very diverse. As we"ve moved towards industrialization of food, we"ve lost a lot of biodiversity. Few varieties of many foods compared to what we used to have. Losing contact of the rich heritage of food and becoming more vulnerable to diseases (less food security because of loss of biodiversity) Heirloom varieties are the reclaiming of the lost varieties of foods.
