Ph regulation and detect spoilage of proteins: sweet. Group of at least 30 similar receptors. Binding of alkaloids (ex: caffeine) and toxins. Don"t have good taste, so don"t want to ingest more: umami to avoid toxins. Need for krebs cycle, neurotransmitters, and as a protein indicator: fat. 3 cm2 patch on roof of nasal cavity. Receptors: 5 million with around 1000 types. Not as intimate as eating, just gathering info from a distance: in the air, but must dissolve. Too dry of air= loose smell components: high turnover area, categories last 2 months.
