Rise of obesity (excess weight and sedentary lifestyle) Various factors shape eaing behaviours, like individual psychological factors, family inluences, peer pressures and the physical environment. Food environments are those insituional spheres where food is displayed for sale and or consumed. Food was largely produced and consumed within the household in the country-side. The rise of industrial capitalism undermined this unity in what became the developed world, as masses of people were forced of the land and into the industrializing ciies. This has allowed processors and retailers to dramaically shit food consumpion paterns and shape mass diets. Food is procured from private, for-proit insituions, which are now dominated by supermarket chain-store operaions that increasingly operate on a global scale. Not for proit sphere = school where food env tradiionally were run on a not-for-proit basis. Nutrient-poor edible products that are typically high in fat, sugar and salt and oten provide over-abundant calories.
