Food environments are those insituional spheres where food is displayed for sale and or consumed. Food was largely produced and consumed within the household in the country-side. The rise of industrial capitalism undermined this unity in what became the developed world, as masses of people were forced of the land and into the industrializing ciies. This has allowed processors and retailers to dramaically shit food consumpion paterns and shape mass diets. Food is procured from private, for-proit insituions, which are now dominated by supermarket chain-store operaions that increasingly operate on a global scale.
