Organisms and/or their metabolic products whose presence in a given food is used to asses existing quality or to predict shelf life. Organisms that are used to assess the safety and sanitation of a given food product. Should be present and detectable in all foods whose quality is to be assessed. Growth in #s should be neg. correlated with product quality. Should be easily detected & enumerated in a short time & clearly distinguished. Growth should not be adversely affected by other components in food microbiota (not inhibited by another microbe) Should be easily distinguishable from other organisms. Have a history of constant association with the pathogen whose presences it is to detect. Should always be present/absent when the pathogen of concern is present/absent. Should be an organism whose numbers correlate (ideally) with those of the pathogen.
