Document Summary

Stages of food processing: ingestion, digestion, absorption, elimination. An animal"s diet must supply: chemical energy; carbs, fats, others, organic molecules, essential nutrients, organic molecules must contain carbon and a source of organic nitrogen, essential nutrients are materials that an animal cannot assemble from simpler organic precursers. Proteins in animal products such as meat, eggs, and cheese are (cid:321)complete(cid:322) in that they provide all the essential amino acids in their proper proportions. Most plant products are (cid:321)incomplete(cid:322) in that they are deficient in one or more essential amino acids. However, vegetarians can easily obtain all the essential amino acids by eating a varied diet of plant proteins. Essential fatty acids are necessary for a variety of cellular components including membrane phospholipids, signaling molecules, and storage fats. Vitamins and minerals are also essential for good health. Be careful with a, d, e, and k which are fat-soluble.
