Four emergent properties of water: cohesion/adhesion/surface tension. Cohesive behavior- ability of molecules to stick together with other same molecules. Adhesion behavior- ability of molecules to stick to other molecules. Water can stick to a polar tree cell wall to counter force of gravity: versatility as a solvent. Allows organism to absorb nutrients in plasma in the blood. Majority of our food and substances we use are solutions in water. Nutrients in the solid that plants absorb. Water can dissolve larger molecules like proteins if the proteins have sections of them that are polar: expansion upon freezing. In liquid form the hydrogen bonds keep breaking and reforming. In solid form there is a crystalline structure that keeps the water molecules at a certain distance from each other. Important because if solid water was denser, then all our oceans would freeze solid. Water is most dense at 4 c: ability to moderate temperature.
