Some lipids are used as an energy insolubility in water contributes to ability of forming cell membranes. Fatty acids consists of single hydrocarbon chain with a carboxyl group. Longer the chain length less soluble in water. Fatty acids with one double bond are monounsaturated. More than one double bonds are polyunsaturated. 3 fatty acid chains + glycerol molecule. Fats with shorter chains are more fluid. As the chain length increases, becomes less fluid. Saturated fats like butter are solid because chain length is long and straight. Fatty acid chains that are bent cannot be packed together as close, so they are more fluid. Phospholipid are the primary lipids of cell membranes. Pl contain two hydrophobic fatty acids at one end attached to hydrophilic polar group. Cell response to the environment and growth.
