The topic of this corse is the biology of cells, their structure and how they function. Cells are composed of a complex mixture of chemicals, some simple molecules and some very complex molecules. The goal of the next two lectures is to introduce you to the concepts of chemistry that are most important in understanding how cells, and thus all living organisms, function. All life on earth (that we know of) absolutely depends on water. Water is the solvent of which almost all biochemical reactions occur. In ice the bonds don"t back meaning there is no relative motion between the molecules thus forming a solid. Dipole of water molecule allows stabilization of charge groups in solution: solid salts dissolved to form hydrated ions, hydration shells form and water continues to move around the shells forming a solution.
