A market is a collective description for: the group of people that may buy your product/service, who share similar needs. A market segment is a subset of consumers who have common needs and priorities, who you can target in a similar way: using demographics, psychographics, behaviors, geography. A customer who is representative of your typical customer. You want to know: what they value, how they see themselves, how they behave, how they communicate, what motivates them, who they look up to, what their needs are. Practice converting empathy mapping data to create user/customer persona. Don"t worry about the format of the persona, just think about the content.
