Harvest: separation from mother plant, beginning of deterioration process. The longer the crop waits before use the lower the quality. Delphi principle: ask someone very knowledgeable about a subject to quantify. Durable: low moisture content, small unit size, low respiration rate, low generation of heat, hard texture, not easily bruised, stable shelf life, loss due to external agents (molds, insects etc) 1- nutritional; less loss due to spoilage, remaining food tends to be more nutritious. 2- economic incentive: waste represent economic loss, loss increases as food moves down food pipeline (cost of food, handling, transportation, storage) 3- feedback incentive: excessive food loss deprives initiative to produce more due to fear of greater loss. 4- cost effectivity: food supply increased without more land to cultivate, more energy, water or capital. 1-biological and microbiological: consumption or damage by insects, pests, animals and microorganisms. 2-chemical and biochemical: undesirable reactions between chemical compounds in food ex browning, rancidity, enzymatic activity.
