Critical volatile = chemical by which fruit odour is recognised. Climacteric fruit will ripen after harvest once mature. Living, respiring tissue higher the respiration rate the more perishable: postharvest changes can be slowed not stopped, water loss is the main cause of deterioration, loss also due to fungi and bacteria. Some blooms produce ethylene as they senesce (and all when wounded) No climacteric but all wounded plant tissues produce ethylene.
