Sensible heat is stored as latent heat during melting or boiling (or sublimating) Latent heat is released as sensible heat when condensing or freezing (or depositing) When liquid becomes gaseous, heat is taken from the surroundings. When gases become liquid, heat is transferred or released to the surroundings. Gas has a lot of heat energy (some sensible and some latent) When we cool it down, we are taking out the sensible heat until it is all taken out, then latent heat is extracted during the phase change.
