Variants: birds crop replace teeth with grinding function, ruminants 3 compartments ahead of stomach, hindgut fermentors larger cecum and large intestine. Ruminants: three compartments evolved from the esophagus: reticulum rumination. Rumen bypass in calves: rumen micro ora to digest complex carbs. Microbes die and become protein: omasum absorb water from rumen contents, abomasum(stomach) breaks down proteins. Cecum is enlarged symbiotic bacterial digestion similar to ruminant.
