Why is biotech so into cellulose? it is the most abundant biological element; strong, and great branching to keep structure. Cellulose is indigestible to us humans (and many other animals) More carbon carbon & carbon hydrogen bonds; more energy the carbon can have. Oxidation reaction = getting electrons out of this. Can get electrons out of fat molecule. Oxidizing carbon = lowering energy state = gaining energy. Changing fatty molecule to co2 gains more energy than sugar to a lower energy state. Unsaturated: can still add hydrogens in the structure. Double bond in structure affects phospholipid bilayer, allows more uidity; provides space between the fatty acid chains. Fatty acids change between being saturated and unsaturated. More reduced = more distance to be oxidized. Sugar cannot pass through the membrane so if water comes in, it will in ate and explode. Information can be moved around in forms of proteins.
