Key concepts: protein denaturation is the loss of tertiary and/or secondary structure within a protein, can be caused by heat, acid, or other agents that interfere with hydrogen bonding. Shape of protein predicts its function: proteins are held in shape mostly by non-covalent bonds, major classifications of structures: globular, fibrous, transmembrane, dna binding. Tertiary structure: alpha helices and beta pleated sheets combined with irregular elements. Quaternary structure: proteins made up of more than one subunit, example: hemoglobin. Subunits can he the same, or different: homo or hetero- Denaturation: proteins may be denatured, destroys secondary and tertiary structures, disruption of the hydrogen bonds destroys the structure, can be done so by temperature or ph changes, this usually then inhibits the function. Hemoglobin hba1c: measuring hba1c gives a picture as to what kind of conditions the rbc has been exposed to over the last 6 weeks up to 4 months.
