HUN2201 Chapter Notes - Chapter 5: Saturated Fat, Fish Oil, Digestion
Document Summary
Diverse group of molecules that are insoluble in water: fats. The lipid content of diets and foods: three types of lipids are found in foods and in body cells and tissues: Also called triacylglycerols contain: three fatty acid molecules. These are classified by the types attached to the glycerol backbone. Carbon chain length: short-chain fatty acid: less than 6 carbon atoms, medium-chain fatty acid: between 6 and 12 carbon atoms, long-chain fatty acids: at least 12 carbon atoms, carbons can be numbered. Methyl end (ch3(cid:895): -carbon (alpha first) (omega last: the length of the chain determinds how the lipids will be digested, absorbed, metabolized, and used. If a fatty acid is saturated, then it has the maximum amount of hydrogens possible: there are no double bonds. If there are any double bonds it becomes unsaturated. Polyunsaturated- multiple double bonds: the level of saturation affects the shape of the fatty acid.
