Document Summary
Lecture 7 reading guide reading assignment: chapter 7 in nutriion for a changing world. Learning objecives: summarize the events that lead to the development of atherosclerosis and arteriosclerosis. As ldls accumulate in the blood, they iniltrate the arterial lining and become oxidized, causing inlammaion and injury to the vessel wall. Plaque development begins as lipids from ldl accumulate here. As lipids from ldl coninue to accumulate, plaque expands and may oten block a signiicant porion of blood low. As plaque develops, it may also become vulnerable to rupture. Plaque rupture promotes the formaion of a blood clot that will further block blood low through the artery. Idenify at least ive risk factors that afect the iniiaion or progression of cardiovascular disease. Poor diets high in trans fats, sat fats, cholesterol, sodium (increases risk of hypertension which increases risk of cvd) and low in polyunsaturated fats, veggies, fruits, whole grains.
