FDSC 1049 Chapter : Microbiology And Food Spoilage
Document Summary
Microorganisms are living entities that are too small to be seen with the naked eye. Bacteria, viruses, protozoa, and fungi (yeast and molds). They function to self-perpetuate, utilizing carbohydrates, protein, or lipids or a host. May alter ph of acid foods so that c. botulinum can grow. Alcohol and carbon dioxide are by-products of growth. Need a host to carry our life cycle, don"t grow in food. Giardia lamblia- giardiasis is most frequently associated with the consumption of contaminated water. If cyst does not germinate it is excreted through the feces. Under optimum conditions a cell divides every 20-30 minutes. Some of the rod-shaped bacteria produce spores. Bacterial spores are extremely resistant to heat, cold and chemical agents. Spores: occur in response to unfavorable growth conditions, increases ability to survive processing treatments, when conditions are favorable, spores germinate into vegetative cells, they resume growth and metabolic activities. Most common source of organisms and spores is soil or water.
