Unit operaions include material handling, cleaning, separaing, size reducion, luid low, mixing, heat transfer, concentraion, drying, forming, packaging, and controlling. There have been recent outbreaks atributed to bacterial contaminaion. Irradiaion is permited for potatoes and onions, wheat and lour, and spices. Chapter 7, pages 109 to 123 unit operaions in food processing. Variety of operaions from harvesing on the farm, refrigerated trucking of perishable produce, transportaion of animals , to conveying a product like lour from a railcar to a bakery. Sanitary condiions must be maintained, losses minimized, quality maintained, and bacteria growth minimized. Removal of dirt to removal of bacteria from liquid food. Brushes, high-velocity air, steam, water, vacuum magnets, microiltraion, and mechanical separaion used to clean foods. Can be achieved on the basis of density or size and shape. Ex separaion of cream and milk, bacteria from luids etc.
