Caffeine: chemically related to purine bases in dna (like guanine, caffeine is an alkaloid- group of secondary compounds found in plants. Made to discourage grazing: desirable effects: promotes energy and endurance. Simulates the central nervous system: undesirable effects: headaches on withdrawal, infertility, birth defects, insomnia, nervousness, irritability. Cafe mocha (latte with chocolate syrup), cappuccino (espresso and foamed milk). Growing coffee: plant is a small tree, grows in a cool subtropical mountain climate, the small fruit is a drupe, called a cherry , the cherry has two seeds called coffee beans, processing: the hull is first removed. The seeds are then fermented for 12-25 hours. However coffee trade is higher than tea trade: tea is a small tree, pruned to be a bush. Green tea= less caffeine: theophylline and theobromine add to the stimulating effect of tea, green tea= lower rates of cancer. Polyphenols interfere with enzymes needed in cancer growth.
