Foods of poor became the culture and was celebrated - popularity over time. Sturgeon have become over fished over time - early 1990"s there was ban on the unregulated harvest of caviar. Sturgeon farming has increased - most sustainable way to continue producing caviar. Has a unique taste - it"s about the feel in mouth. By weight caviar is more valuable than cocaine. Became more and more expensive and packaged in smaller containers.
