Saturation refers to the number of hydrogens attached to a fatty acid (fa). Usually, fats of all saturation levels are found as triglycerides which are 4 fatty acids attached to a glycerol molecule. In nature, unsaturated fats have cis double bonds. Food processors can create trans double bonds by partially hydrogenating unsaturated fats. Trans fat turns liquid oils into solid fats. This extended shelf life, easier to bake within an industrial setting. Trans fat is associated with increased ldl, decreased hdl, and increased triglycerides. In 2015 the fda declared that trans fats are not generally recognized as safe and banned it from the food supply, food manufacturers had 3 years to fully comply. Missing two hydrogens- creates one double bond. Sources of mufas: olive oil, avocado, nuts, and peanut butter.
