You cannot just replace vitamins and minerals and think you"ve replicated a whole-grain product. 5 cup cooked brown rice or other cooked grain, cooked 100% whole-grain pasta, cooked oatmeal, whole grain bread or cereal. Measure of total rise in someone"s blood sugar after eating a certain food. How quickly is glucose from food absorbed. 100 is the standard, or the response one would have to a load of pure glucose. Does not measure insulin response to food. Glycemic load- grams available cho in the food x gi value. Fiber content- if fiber is higher, gi will be lower. Foods higher in fat and protein will have lower gi values. Cooking method- makes starch more or less available. Total amount of available carbs impacts gi values. Food combinations change the impact that a high gi food will have on blood glucose. Inconclusive evidence regarding effectiveness of low gi/gl diets for weight loss.
