Phospholipids, a type of lipid, have one hydrophobic and one hydrophilic end. Saturated lipids have single bonds only in their chains. Unsaturated lipids have a kink in their chain, or simply a double bond among two carbons in the chain. If you mix a free fatty acid in water (like the one in the image), then it will form a micelle: a micelle is a ball of phospholipids (tails in and heads out) A liposome mimics the cells composure of a phospholipid bilayer. In cells, many lipids are part of what we call phospholipids: they are characterized by having hydrophobic tails and hydrophilic. Cholesterols will always be classified as lipids and thus are hydrophobic.
