Document Summary

There are two orientations on the primary carbon. Many times, carbohydrate molecules are in the form of a polymer, from a disaccharide to many. S3 disaccharides are formed by the reaction of the ohs on the 1" and the 4". This reaction releases water and a covalent bond is formed called a glycosidic linkage. In the alpha glycosidic linkage, it is pointing down. The bond is read alpa-1,4-glycosidic or beta-1,4-glycosidic linkage. Starch is easy for our body and enzymes to break down. Enzymes can hydrolyze the alpha-1,4 bond and break them to harness energy from them. Cellulose is one of the toughest molecule on the planet. Will only be used for food if there are no other sources of food. Chitin is the exoskeleton of bugs such as cockroaches. Things we can see with our eyes: up to 1mm small or up to 10x small than 1mm. To see cells, we need the use of a light microscope.
