If the animal is stressed before harvest, there isn"t enough glycogen there to be converted to lactic acid, so the ph will be less than 0. 6% If you have high ph, it increases the light absorption and water binding of muscle. Result: you get a dry, dark, firm piece of meet. *carcass are split between 12th and 13th rib. Cattle must be a minimum of 50% angus-sired genetics. Monograstric (simple stomach: includes pigs, dogs, cats, humans. Ruminant: includes beef, dairy, goat, sheep. Non-ruminants: includes minor species like horses, rabbits, etc. Forwards portion of stomach structure varies from other species. Stomach has 4 parts: rumen, reticulum, omasum, abomasum (like human"s stomach)
