Document Summary

** read about citric acid cycle in textbook ** (how we get energy from food) Protein in american diet: should be about 90 grams per day and has remained fairly constant over the last 30 years. It is rare for there to be a protein deficiency in the u. s. Of dietary protein comes from animal sources (mostly concentrated sources) Most of the world relies on plant proteins from grains and vegetable (which is less expensive than animal proteins) but as the economy grows the proportion of animal foods eaten increases. Animal products contain a high amount of protein, b vitamins and minerals such as iron, zinc and calcium. They"re low in fiber and can be high in saturated fat and cholesterol. Has to do with what parts of the animal we eat (i. e. muscle, dairy). Plant sources of protein are a good source of b vitamins & minerals and are also a good source of fiber and calcium.
