Four phases to growth curve of bacteria. Occurs, because the bacteria begin to run out of food and water. Fourth phase - death or dying phase. Unless there is a man made input, the bacteria never die all the way off and go back to zero. The number of bacteria it takes to get food to spoil. The most bacteria you will ever have on food. Group of bacteria that prefer to grow at colder temperatures. Most bacteria do not like a low ph / acidity. Most bacteria do not like low water activity. The favorite food source for bacteria is carbohydrates (especially glucose and lactose) A manmade input that can make all of the bacteria in food go all the way back down to zero. Freezing usually does not kill bacteria - it just stops them from growing. It is not the bacteria that make you sick, but a toxin produced by the bacteria that make you sick.
