Primary molecule our body uses as stored energy. 3 fatty acids bonded to a glycerol molecule (dehydration synthesis) Good if liquid (often polyunsat--->fat from plants) Straight molecules that can stack and condense well. There really is no bad fat: quantity of the fat is what matters.
