Document Summary

There are 20 common amino acids, but proteins do not contain all of them. Know the 20 standard amino acids - notecards classify molecules on the basis of their polarity (their itneractions with water) Hydrophobic interactions deal with hydrophobic molecules interacting with each other rather than moving towards water molecules. Know how to identify non-polar & polar side chains to know what type of interactions they will have. The side chain determines the structural range and general physical characteristics of amino acids. Glycine- smallest side chain (hydrogen atom) gly, g. Uncharged polar side chains (hydrophilic and participate in hydrogen bonds): uncharged at ph 7. 4. Polar positively charged r groups: hydrogen bond donors. Polar negatively charged r groups (hydrogen bond acceptors): Hydropathy scale: a measure of the combined hydrophobicity and hydrophilicity of amino acid. *no need to memorize, just know the principle* indicative of the likelihood of nding that residue in a protein interior.
