Spindle shaped which orients cells differently; longitudinal layer (of muscle tissue) and circular layer (of muscle tissue); they squeeze the lumen to help push contents down the tract in the proper direction. Assists in mechanical processing the mixing of contents with gastric juices and squeezing them: serosa.
