Secretion: release of water, acids, enzymes, buffers and salts by epithelium and glandular organs. Absorption: uptake of nutrient molecules (organic substrates, electrolytes, vitamins and water) first into the digestive epithelium and then into the bloodstream. Gastrointestinal (gi) tract: tube extending from mouth to anus; about 9 meters long. Accessory organs: secrete various substrates into the gi tract to aid in digestion (salivary glands, pancreas, liver, and gallbladder)
