FDSCTE 2200 Lecture Notes - Lecture 10: Saccharomyces Pastorianus, Reinheitsgebot, Germ Layer
Document Summary
Beer dates back to 5300 bce during sumerian civilization. The egyptians were responsible for the invention of the malting process. People of ancient greece and rome drank wine instead of beer. China and us account for 40% of beer. Reinheitsgebot: german beer purity law; the law defined beer as a product made from barley, hops, yeast and water. Lagers and ales are most popular in the us. Difference between lager and ale: stem from the different factors including the type of yeast used to fermentation, the length and temperature of fermentation, maturation time and temperature, and most importantly the different flavor profiles this process generates. Special processing can create dry (reduced sugar), ice (concentrated beer that is more flavorful), light (reduced calories) Ales require shorter times and higher temperatures; historically easier to produce because can ferment and at room temperature. Therefore, there are more types of ales than lagers. Beer is made from 4 ingredients: malt, yeast, hops, and water.
