We associate paper with printing because paper was introduced in europe in the 14th century and printing was invented in the 15th. In early books, we see lots of decoration. This will be copied in stained glass windows centuries later. By the 13th century, we start to see organizational structure that is similar to modern books. Best, most important stuff (like bibles) would be made from vellum. Monks would spend their lives copying bibles by hand (it would take years to make one)
