NUTR 125 Lecture Notes - Lecture 25: Heartburn, Chyme, Peristalsis
Document Summary
Sweet and salty attract to carbs and salt. This is savory and attracts to protein (meat and dairy) Experiment: apply lipids to the tongue, this resulted in a physiological response in digestive system. Removed esophagus, so there was no physical connection btwn tongue and pancreas/liver discovered they still got a response. There is a systemic signal (not known), this induces secretions from pancreas and gallbladder. Receptor: cd36 (mice), when they mutated this gene, there was no longer a response. These ko mice were no longer interested in fats. Cd36 is a fatty acid transporter. (something that both transports and senses fatty acids) Mice will choose sugar water of cocaine water (even if they are addicted to cocaine) Flat, protects trachea/lungs (helps food go down the right tube) Secretes water/mucus to keep bolus (chewed up food) in motion. Prevents backflowof acid from the stomach to the esophagus this prevents heart burn. Hcl is released and brings the ph down to 1-2.
