Document Summary

More than 200 mg/dl of total cholesterol. American heart association recommendations for high risk individuals: 20-30% of total kcal to come from fat per day. 200-300 mg cholesterol a day (lower cholesterol) 7-10% from saturated fat (includes trans fatty acid) (proteins) ~ 20% of human body is protein (there are 100,000 different proteins in our body) Must be digested and hydrolyzed into amino acids to be absorbed. Plant proteins: legumes (beans, nuts, peas, lentils) Make new proteins (protein synthesis), are converted into energy (4 kcal/g), and make nitrogen-containing compounds. Peptide bond: bond formed between amino acids. Strong bond; not normally broken by cooking. Human body can make 11 of the 20 amino acids; the 9 it cannot make are. All-or-none concept: the depletion of just one essential amino acid will prevent or limit protein synthesis. Foods can be limiting in specific essential amino acids.
