Type 1 diabetes mellitus: insulin producing cells in pancreas are destroyed, very little insulin is produced. Insulin therapy required for life, diet must be coordinated with insulin. Increased risk for cardiovascular disease, blindness and kidney disease. Type 2 diabetes mellitus: long-term, progressive disease characterized by insulin resistance, high blood sugar. Insulin production may be low, normal, or high. Most common type of diabetes (90% of cases) Nerve damage, heart disease, kidney disease, blindness. Ketosis leading to ion imbalances, dehydration, coma, death. Atherosclerosis: inside of an artery narrows due to the buildup of plaque. Glycogen: primary storage form of carbohydrates in animals (2000 kcals) To compare, average person stores about 100,000 kcals as fat. Fats are solid at room temperature; oils are liquid at room temperature. Triglycerides: main form of lipids in food and in the body (storage) Structure: glycerol bound to 3 fatty acid molecules. Foods rich in lipids: butter, nuts, egg yolk, oils, lard, cream cheese.
