Max known temp for archaea is 122 c at 400 atm (methanopyrus kandleri) Karl stetter et al isolated two archaea that grew up to 96 c. No eukaryotes can grow in > 65 c. Difference between high temp and mesophilic is subtle. Internal base pairing, high g+c bonds in rrna. Bacteria and archaea - reverse gyrase, tightens dna coils. More hydrophobic core and between positively and negatively charged amino acids. Most successful: dna polymeras from thermus aquaticus used for pcr. More thermostable and more accurate dna polymerases from archaea also marketed. Human stomach and skin uses low ph to help control microbial populations. Internal ph in these organisms is closer to neutrality. Pasteur showed brief heat preserved beer and wine. Adapted to reduce potential pathogens and spoilage in milk (pasteurization)
