The higher the cantles the snugger the fit for the rider. The use determines the height and width of the horn. Allows for maximum leg contact with the horse. Seen most often with a front and back cinch. May have 2,3,4, or 5 billet straps. The reason for the 3, 4 or 5 billets is for the placement.
