The truck driver goes and gets multiple tanks from different dairies and they commingle in the truck container. Lab technician will take the sample collected by the truck driver to be tested in the lab. She also takes a core sample from the top of the truck down into the milk container to be tested as well: checking for antibiotics drugs used to impede the growth of microorganisms, check for added water. Milk is priced based on percent fat as well as total volume; so they must test for added water because it dilutes the milk and changes the freezing point: check for odor/flavor. Swinecrest if cows consume this it causes the milk to smell like skunks. If something is not right with the tank on the truck, the individual samples from each dairy kept by the driver are looked at closer. The lab technician can decide whether to flag the truck or send it through.
