- MP depends on the length of chain and the degree of
saturation
o For saturated chain, MP increases as the chain
length increases
▪ It takes more energy to disrupt the van dar
waals interactions
o Unsaturated chain (with double bonds) requires
low MP
- Longer chains are less mobile than shorter chain
- Saturated is less mobile than unsaturated
- Biological membranes are composed of many types
of lipids
- Fluidity is maintained over a range of temperature
- Are able to alter different types of fatty acid chains to
improve/limit the fluidity
- Cholesterol influences fluidity
o Rigid and planar structure
o Cholesterol restrict lipid movement which
decreases the fluidity in the fluid state
