Diffusion rate (fluidity of the membrane) is determined by: Longer the chain = more attraction = move slower past each other. Long chains have a lower diffusion rate. More unsaturation = more kinks = harder to pack together = less attraction. Lower (near freezing - lipids want to pack together)
