Hermione says just because he is really nice, doesn"t mean he is bad. Yes he hates you, but it doesn"t necessary mean that he wants to kill you. So useful to have him swooping around likes an overgrown bat. Next to him, who would suspect p-p-poor, st-stuttering p-professor quirrell? .
