This chapter looks at different sets of tools to help us find and determine the properties of substances to show us how to find their phase and state. A pure substance is a substance that has a homogenous and invariable chemical composition (no matter the phase and state). Therefore, it is not a pure substance, but it behaves like a pure substance as long as there is not phase change. A convenient way to determine the phase of a pure substance as a function of its properties (p, t, v) is to look at phase diagrams. Consider a process in which water contained in a frictionless piston/cylinder arrangement is heated to go from liquid state to vapour state. The piston (constant mass) floats on the water and moves freely to ensure the pressure is kept constant through out the process. When we start heating up the water, t goes up, minor increase in v is also observed.
