HSS 2342 Lecture Notes - Lecture 4: Glycemic Index, Glycemic Load, Dental Caries
Document Summary
Foods containing cho have a wide range of effects on blood glucose concentration during the time course of digestion. Some result in a rapid rise followed by a rapid fall in blood glucose concentration whereas others result in a slow extended rise and a slow extended fall. The glycemic index ranks carbohydrate-containing foods according to their blood glucose raising potential. High gi foods are rapidly digested and glucose is the major monosaccharide absorbed. Low gi foods are slowly digested and hence glucose is slowly released and absorbed. Low glycemic diets may be good for type 2 diabetes and other chronic diseases. Glycemic response -speed of glucose absorption, blood glucose rise, and speed of return to normal. The glycemic response is measured by how quickly the cho is digested and absorbed. Subjects eat a test food and then measure the blood glucose immediately and then after 2-3 hours.
