Part 1: gram positive bacilli - spore forming. Gram positive are purple because they have a thick peptidoglycan layer. Is you"re able to make a spore you will sense something in the environment. When it does, takes dna and pushes it to one side, forming cocoon around it. Cocoon/spore is resistant to drying, uv, chemicals, sanitizers, ect. Something tells you you can release your spore. Encoded on pxo1 plasmid (one of 2) Plasmid contains virulence factors which are transcribed optimally at. 37 degrees, and increased co2 and serum proteins. Separately proteins are non-toxic but lethal combined. Remember: capsule protects and is made of protein. Causes food poisoning when spores enter food product. Is an enterotoxin - responsible for illness. Heat labile: nausea, abdominal pain, diarrhea, 12-24h. Heat stable: severe nausea and vomiting, short incubation. Anaerobic - differentiates this bacteria from other spore forming bacilli. Rapidly fatal food poisoning from lethal neurotoxin.
